Cooking With Kids: Mini Tacos

Your kids can help make these simple and tasty treats the whole family will enjoy

Making mini tacos is a great way to get kids involved with an easy and delicious recipe. You customize what goes on the tacos and your children can help. My 3-year-old was my helper. He did a great job and seemed to enjoy getting to make something the whole family could eat.

Ingredients

• 1 lb. ground meat or chicken

• Tortillas (flour or corn)

• Toppings: cabbage, tomato, avocado, onions and shredded cheese (select your own favorites)

Directions

Preheat the oven to 375º. Brown the beef and drain the fat. Add spices or use taco seasoning to flavor the meat. Set aside. Spray a cupcake with a non-stick oil. Cut the tortillas into squares. Place one squares into each cupcake compartments. Your kiddos can help do this. Cut the veggies and prepare the toppings.

Now you are ready for the fun part — filling the compartments. I let my son do most of this. He loved it. Keep in mind that whenever you mix kids and food there always tends to be a mess. We layered in the meat first and then vegetables and then the cheese last.  Bake for about 20 minutes.

Top with fresh veggies or other toppings, such as sour cream. Eat and enjoy!

  1. How do you suggest cutting tortillas into squares without wasting much of the tortillas?

    • Good question Kathy. I would suggest using the smaller tortillas so you are not wasting so much. One of our readers suggested using wonton wrappers instead of tortillas as well. Hope this helps.
